i abhor sodium. they asked me if i wanted more sodium, i said: "Na." just a chemistry joke to lighten your day. the process to make soy sauce is awesome, though; fermented soybeans, etc. if i was ranking the process, it would get four stars. all fermentation takes with it a degree of guro disgust.
