11/4/2026My mums tofu and egg recipe Ingredients: egg, tofu (soft is my fave, but anything under extra firm is good, may need to add some extra water if tofu is firmer), scallions, oil, sesame oil, soy sauce and salt. OPTIONAL but recommended: a pinch of flower pepper, or regular pepper. 1. Prep: slice tofu into chunks, beat up the eggs (white streaks are fine, chopsticks work the best), slice scallions 2. Put around a tablespoon of oil on high heat and fry a pinch of scallions. 3. Add eggs, the oil should be hot enough the eggs bubble, scramble into chunks and until mostly cooked 4. Add rest of scallions, a light splash of sesame oil and soy sauce, the pinch of flower pepper, and salt to taste. Add tofu. 5. Mix gently, trying not to break the tofu too much, and cook until water has boiled out of the tofu into a broth. Broth should be a tan color. 6. If desired, mix some starch with water and stir it in with low heat for a thickened broth. Serve with rice. Yum yum in my tum tum
